Siphoning Gooseneck
We use a special siphoner to siphon out of the brewpot. Some people use a
copper pot scrubber on the end of a racking cane, while others (like myself, and
Jean-Pierre who showed me this trick) use a special goose-neck ring that fits
into the pot. It is basically a length of 3/8" flexible copper tubing that
has been carefully bent to make a complete circle along the bottom of your
brewpot. You make it fit tightly against the wall of the pot the whole way
around, making sure it sits as flat as possible on the bottom of the pot, and
then you carefully bend it up the inside wall so that it sticks out the top, and
bends down over the side like a J-tube. Now you drill tiny holes along the
bottom of the circle that sits on the bottom of the pot (about 1/4" apart),
and use this nifty little rig to siphon out of the brewpot. It's tough going
with the drill because you have to use such a tiny bit, but once you are done
you'll love it!
