Our Yeast Bank
Using any one of a variety of techniques, it is
relatively easy to maintain your own yeast bank with a variety of different
brewing yeasts. We use a large bar-fridge to store them in, which we
periodically clean thorougly, and sanitize with Dettol. Until July, 1996, we
were propagating our yeast in beer bottles,
but have since then switched to doing them on on
agar, in tiny mason jars. The main advantages the mason jars have over the
beer bottles is that they take up much less space, and remain viable over many
more generations since they are grown on agar. We could save even more space by
growing our yeast on real petri dishes, but we save a lot of money by using
mason jars, instead.
