Boil the kit and the sugar in 7 litres of water for a half hour, then empty brewpot into a 19 litre carboy which already contains 7 litres of cold water. Agitate well to aerate, then top up with more cold water. Allow to cool below 75F, then pitch. After 5 days, mix the Isinglass with a bit of warm water and add to the carboy.
