Munich Helles

This recipe is yet another variation on our standard recipe for both Kolsch and Canadian Ale and Lager. This time around we reversed the amount of Munich and 2 Row to give the beer an authentic German flavour. The Hallertauer hops help out in that area, as well. This gave copper coloured beer, which is a bit darker than a Helles should really be, so next time we'll likely replace half the Munich with Vienna and see what happens. All in all, an extremely flavourful beer. We didn't actually lager it, so technically it isn't a real lager. For best results make a large starter of a good liquid German Lager yeast, and follow your favorite lagering timetable.

Ingredients for 20 Litres

  • 6lb Canada Malting Munich
  • 1lb wheat
  • 2lb organic 2 row
  • 1.0oz Randy's Hallertauer hops
  • 0.5oz Randy's Hallertauer hops

Put 9 qts of 185F water into cooler and allow to come down to 169F.

  • 13:20 mashin @ 155 - frozen pop bottle to bring to 154
  • 14:00 stir to 149 add boiling water to 151
  • 15:05 recirc - add 3/8 tsp acid blend to sparge water
  • 15:25 begin runoff
  • 16:30 end runoff, collect 26l SG 1.037, begin boil
  • 16:55 boil commences
  • 17:00 add 1.0oz Randy's hops
  • 17:30 add 0.5oz Randy's hops
  • 18:00 add moss
  • 18:10 gas off, whirlpool
  • 18:15 begin chill
  • 18: 55 end chill
  • 19:00 pitch 2 packs Cooper's, begin cleanup.
