Otto Hoxxeim Kölsch-Style

Ingredients

  • 1 3kg can Otto Hoxxeim Kölsh
  • 1 tsp Irish Moss

Method

Add can to 2 gallons water and boil for 15 minutes. Add Irish Moss and boil 15 mintues more. Sparge into a 23 litre carboy which contains 2 gallons of water, then fill the rest of the way up. Agitate well. Allow to cool below 74F and pitch.

Pitching

Nothing special about the pitch except that the yeast that came with the kit was rehydraded.

Taste Tests

This is an all-round excellent beer, satisfying everyone who's tasted it. We've passed it around quite a bit, and it was enthusiastically drunk both by people who don't like domestic beers, as well as those who normally wouldn't drink anything but.

The beer has a nice darker amber colour, and a light, hoppy flavour.

Definitely worth making again.
