Kölsch Style or Can-Am Ale

Technically speaking, the puffed rice in this recipe is a huge no-no for a Kölsch-Style. The flaked oats surely aren't used in accordance with the Reinheitsgebot, either, but at least they are commonly used among German homebrewers for better head retention and flavour. The hopping here is about as true to style as you can get : it's the first time I'm using the Tettnanger that my E-friend Rudi (who lives just outside Tettnang) sent me from Germany.

Ingredients for 42 litres :

  • 17 lb 2row
  • 1.5 lb Wheat
  • 500 g puffed rice
  • 1/2 lb flaked oats
  • 2.0 oz real Tettnanger leaf (personally imported from Tettnang, 5.5%, 60 min)
  • 1.0 oz imported Saaz pellets (3.2%, 60 min)
  • 3/4 oz real Tettnanger (5.5%, 15 min after the boil)

Procedure :

  • Mash was fairly high - 155F, started higher but brought down. Could be high FG
