Cologne-Style German Ale
Finally got my first batch off since the winter, and brewed a Koelsch-Style.
I nearly panicked, though, because I couldn't find my big scale (Mr Organisation
here), and my medium sized one has finally bitten the bisquit after a good 5
years of service. I ended up roughly estimating by volume in my grain
buckets, and only overshot a Koelsch-Style OG by 1 point (I hit 1.047).

My Estimated Grain Bill was :
- 15 lb 2 Row
- 1.75 lb Vienna
- 1.75 lb Wheat
Hops :
- 2.0 oz Tettnanger Leaf @5.5% (70 min)
- 1.0 oz Saaz Plugs @3.2% (55 min)
Mash
- 90 minutes at 150F/65C for 90 minutes, then slowly (15 minutes)
- came up to 70C/158F, stayed there maybe 15 - 20 minutes, then
- came up to mashout 168F/75C
Finshed up with about 45 litres.
At CABA last weekend Chris White of White Labs gave out vials of "pitchable"
yeast. When asked he claimed the cell count was about 70% of optimal for
an average 20 litre batch. Looking at the amount of slurry I'd believe that, but
I made a quick starter anyway with wort I'd bottled up some time ago. I started
it in 500ml circa 1.040 the night before, then on brewday morning I added
another 500ml. It was actually ahead of the 2 packets of Coopers I
put in the other 25 litres of wort.
Should be interesting to see how those two compare. So far this morning
the Koelsch is just starting to get a good foam up but the Coopers isn't showing
and signs yet.
