Here is a PDF of a presentation I did upon invitation to speak on Kölsch at the 2000 CABA Conference in Toronto, Canada.  See also our Bonafied Kölsch Page.

For details on a more stringent definition of the style, see our styles page. The web site http://www.bier.de/ is also an excellent resource for information on any German beer. The site is mirrored in both German and English, and even has some truly authentic German beer recipes.

(1) "Stammkneipe" is difficult to translate. It has the essentials of "favorite pub", but the "Stamm-" prefix gives slant to the basic idea since it comes from the same root as English "stem", and is a prefix most often used in dealing with ancestry, so "Stammkneipe" means something like "the pub whence I stem" or "the pub I stem from".  The roots of the word imply that when you walk into a "Stammkneipe", you walk into a part of someone's roots and heritage, and a very meaningful part of who they are.
