Papa Bill's Brown Ale

This is yet another slight variation of our old faithful recipe. As usual, it produces a fairly light brown ale that wouldn't be identified as a Brown Ale if drunk with eyes shut. In that regard, it's likely what many people would call a North-American Brown Ale. As always, it is extremely popular.

Ingredients for 20 litres

  • 7lb 2row
  • 140g wheat
  • 500g Munich
  • 125g Chocolate
  • 4oz Carastan
  • 200g Crystal
  • 1.0 oz East Kent Goldings Leaf (60 min)
  • 0.5 oz Fuggles Leaf (60 min)
  • 0.5 oz Fuggles Leaf (30 min)

Procedure used for this Batch

Put 9 qts of 185F water into cooler and allow to come down to strike temp of 169F

  • 09:10 mash in @ 151
  • 10:35 mashout 165 (5 qts 185 water)
  • 10:45 begin recirc
  • 10:55 begin runoff
  • 11:35 stop to heat more water
  • 11:50 resume
  • 12:10 end runoff
  • 12:15 begin boil
  • 12:40 boil commences
  • 12:45 add hops
    1.0 oz East Kent Goldings Leaf
    0.5 oz Fuggles Leaf
  • 13:15 add hops
    0.5 oz Fuggles Leaf
  • 13:15 propane runs out, lose boil
  • 13:55 resume boil
  • 14:10 add moss
  • 14:25 burner off
  • 14:35 whirlpool
