     Cider Infection 

    You can see a small clump of scummy bubbles on the right in the middle - just to the right of the flash glare

    Here is a better view of the culprit

    All the other bubbles are nice and clean, but this small group is all scummy

    So we rack it off to our kettle

    We keep the lid mostly on simply because we have cats and there is always cat hair in the air

    We're only going to 170F but so much CO2 comes out of solution so quickly at that temperature that it looks like a rolling boil
